hey now...i resemble that remark...hahaha...that's the only way to make chili...beans and meat...try it with a pound of beef and 1/2 a pound of spicy sausage with beans...gives it some extra taste...panzer guy
My wife makes some really good chili, but she can't handle spicy very well, so I add my own peppers. She uses 1 lb of ground beef and 1 lb of sausage as well. She also uses kidney beans and chili beans. I don't mind, even though I'm a native Texan. I like to eat my chili with Fritos or cornbread, but she's from Kansas, and those people eat their chili with cinnamon rolls.
I totally agree with all y'all chili heretics. Meat and beans, usually use pinto, kidney, red, and black, and toss in some corn kernels, too. I've even used potatoes one time, it wasn't bad, just not good.
Chili is like gumbo like fried rice like paella like fish stew. My dad called them 'garbage soups' or 'garbage meals' meaning you use what you have to make it. It's not an insult, as my dad was Cajun, it's just what it is.
Like bouillabaisse, which originally was 'What we couldn't sell yesterday is now in the soup.'
And you beat me by a week. Got 'Beans and Cornbread' planned for next week followed by chili made with the leftover beans, to be served with cornbread (cornbread in both instances being good Southern cornbread, cooked in a skillet in the oven like God intended and with NO FRIGGIN SUGAR as only heretics and yankees put sugar in their cornbread.)
If you must make a garbage meal and use potatoes, try this:
4 Slices bacon, chopped 2x 12oz packages of kielbasa, sliced 1/2” thick 1 lb. Hamburger 1 white onion, diced 2-3 cloves minced garlic 3 Tbsp flour 1-1/2 tsp chili powder 1x 14.5 oz. Can crushed tomatoes 2x 16 oz. Baked beans 1x 7 oz. Can chopped green chiles, undrained. 1x 15 oz. Can sweet corn, undrained. 2 large russet potatoes, chopped into 1/2” cubes. 1 cup water. Parsley for appearance Salt and pepper to taste.
Crisp bacon, set aside. Brown kielbasa in bacon grease, set aside. Brown burger with onion, add garlic at end. Add salt, pepper, flour and chili powder. Stir and cook 1 min. Add remaining ingredients, bring to boil, reduce heat and simmer 1 hour.
I usually save potatoes for our beef vegetable soup. Any leftover mashed potatoes that haven't accidentally been made into potato pancakes get tossed in, too.
Of course, to do a beef vegetable soup you have to start with a big pot roast soaked in white wine (I use kraut wine, not the frog stuff) and with potatoes, carrots and onions (if I'm feeling freaky I'll toss some parsley in with the wine soak) and then make the soup out of what's left over, after everything is chonked up and with a bag of mixed veggies and couple cans of petit chopped tomatoes and anything else that looks like its on the verge of death.
And... serve it with cornbread. Seems to be a recurring theme at my house.

ReplyDeleteMy recipe uses 1 lb of burger and 1 lb of sage sausage. Roasted poblanoes are the core of the spice.
