Most Americans assign zero religious connotation to Christmas, it's a friends and family get together with gift giving and food.
So when someone says Merry Christmas to your atheist sensibilities, just say, "And a Happy New Year!" in reply. They're not trying to proselytize, just wishing you well.
For those who're local: Christmas ham is at 1400.
